Autumn plum crunch cake


This is an easy peasey cake to make, perfect with a cuppa or as a pudding with cream or custard.

Pre heat oven to 160

Line a 2 pint loaf tin with a loaf tin liner

8 oz plums
5oz Softened butter
5oz golden caster sugar
5oz SR Flour
Grated zest and juice of 1 Orange
2 eggs, plus 1 egg yolk

2 tbsp fresh lemon juice
8oz golden caster sugar
1oz rough sugar cubed roughly crushed

Halve and stone the plums, cut half into wedges and the rest roughly chopped.
Lightly beat the eggs with a pinch of salt.
Beat the butter and the sugar in a bowl till light and fluffy. Add the egg a bit at a time, beating well after each addition. Fold in the flour, the grated orange zest and 2 tbsp of the juice. Then the chopped plums.
Spoon into the prepared tin, then scatter the wedges of plums over the top of the cake.
Bake for 55 mins or until a skewer inserted into the cake comes out clean.
Mix the remaining orange juice with the lemon juice and caster sugar. Spoon this mixture over the top of the cake and sprinkle with the crushed sugar pieces. Leave cake to set.
