Pasta risotto with peas and pancetta

So first new recipe of 2013!! This is super quick and there’s no slaving over the stove constantly stirring it!

Serves 2 easily doubled

2 tbsp garlic oil
150g pancetta cubes
150g frozen petit pois
250g orzo pasta
625 ml boiling water
Salt and pepper to taste
25g butter
Good handful of grated Parmesan

In a heavy based pan suitably big enough for all the ingredients. Heat the oil and add the pancetta.
Fry until crispy, then add the peas and cook for a minute. Add the pasta, stir well then add the water.
Turn the heat down and leave to simmer for 10 minutes. Stir from time to time to prevent sticking.
After 10 minutes the pasta will be cooked. Beat in the butter and Parmesan, check for seasoning then serve in warm bowls.
