This was just so unbelievably tasty plus super quick for a mid week supper.

Ingredients
300g sirloin or rump steak
1 tbsp olive oil
1 garlic clove crushed
1 red chilli, deseeded and finely sliced
2 tbsp balsamic vinegar
1 x 400g tin of puy lentils drained
Good handful of parsley chopped
1/2 a jar of marinated artichokes drained
1/2 bag of spinach or mixed leaves
50g feta crumbled
Method
Rub the steak on both sides with half the oil and season well. Heat up a griddle pan till very hot. Cook steak for 4 minutes each side, or cooked to your liking. Transfer to plate and leave to rest.
Remove the griddle pan from the heat and add the rest of the oil, garlic and chilli and leave to cook in the residue heat. Add the balsamic and pour into a jug.
Tip lentils into a bowl, add parsley and artichokes. Season well, add vinegar mixture, steak juices, spinach and toss together.
Place lentil salad onto plates, slice steak thinly and place on top, then scatter feta over. Garnish with extra sliced chillis.
