Crispy Thai Style stir fried Pork

Another new recipe tried out, super quick to make, full of flavour and low fat too! It’s a winner in my book.

Serves 4
Ingredients
2 tbsp sesame seed oil
500g minced pork
2 cloves of garlic crushed
1 yellow pepper deseeded and sliced
2 chillis, one deseeded and chopped and 1 washed and sliced for garnish
6 spring onions, washed, trimmed and thinly sliced
200g pak choi, washed and roughly chopped
90g jar of fragrant Thai base
4 nests of egg noodles
1 lime cut into wedges

Method
Heat a large frying pan or wok until very hot. Add the sesame oil, add the pork and stir fry over a high heat until brown.
Add the garlic, chilli, pepper and 3/4 of the spring onions to the pan, stir fry for 3-4 mins until pepper is tender. Then stir in the pak choi and Thai base, stir fry for another 1-2 mins until the pak choi has wilted.
Meanwhile cook the noodles as per pack instructions, drain well.
Divide noodles between 4 dishes, top with the crispy pork, garnish with the chilli and spring onion.
Squeeze over the lime wedges and serve. Enjoy.
