This is an amalgamation of a couple of recipes found on the internet. I was entertaining and needed something light, tasty and more importantly quick to make.
Makes 4
Ingredients
I pack of ready made puff pastry (I bought ready rolled sheet)
2 x leeks, washed and finely sliced
1 large knob of butter
4 tbsp of cranberry sauce
2 x small rounds of goats cheese ( I used Sainsbury’s mini gevrik)
Method
Place leeks and butter into a pan and sautée gently to completely soften and not colour. Takes about 20 minutes. Leave to cool.
Preheat oven to 200°, grease a large baking sheet.
Cut out 4 circles of pastry ( I used a saucer) and place on the baking sheet. Place a tbsp of cranberry sauce on each circle, divide leeks between them too. Top with half a round of goats cheese and a couple of sprigs of thyme.
Bake for 25 minutes. Serve with rocket salad.
