This is comfort food personified.Ingredients
2tbso oil
1 large onion, finely chopped
1 large carrot, peeled and finely diced
750g beef mince
2 garlic cloves crushed
1 thumb sized piece of ginger, grated
2 heaped tbsp of curry powder
2 tsp Garam masala
150ml passata
200 ml beef stock
1 tbsp tomato purée
90g frozen peas
500g sweet potatoes, peeled and cubed
500g potatoes peeled and cubed
100g mature cheddar grated
Method
Preheat oven to 200°, fan 180°, has mark 6. Put oil in large pan and gently fry the onions and carrot until soft. Turn the heat up and add the mince and a good grind of black pepper. Break the mince up in the pan and cook until brown.
Add the garlic, ginger, curry powder and garam masala. Stir to combine and cook for a few minutes. Add the purée, passata and stock. Stir well, the reduce the heat and simmer with lid on for 20 minutes. Stir regularly. Whilst the meat is simmering, cook the potatoes until soft. Drain potatoes and allow to dry.
After 20 minutes, add the peas to the mince and stir well. Put mince mixture into an ovenproof dish. Crush the potatoes and place on top of the mince. Sprinkle with cheese and bake for 20-30 minutes until golden.
