Langdale walk 11th March

Another gorgeous Sunday and were heading off for a walk with friends.
Did a low level walk from Elterwater along the valley bottom to just before new dungeon and then along through chapel stile back to Elterwater. I love mountains but this walk proved you can have a spectacular walk on lower ground. It was nice seeing the hills from a different prospective.
Our walk built up an appetite so it was back to Ben and Heather’s for homemade soup (choice of 3 no less) and sandwiches. I had contributed chocolate and Banaba cake, brownie and a new recipe of white chocolate and peanut butter cookies. Will post recipe shortly!
As we left it was such a lovely evening, decided to call into the Wateredge in Ambleside for a drink to watch the sunset.

Portmerion 5th March

To make it a bit if a break, decided to go and stay at Portmerion. Never been before and got a cracking deal stating on a Monday night.
Drove through the middle of Wales to get there, the roads were amazing and was in awe if the wonderful scenery.
The weather was very kind to us and we arrived in Portmerion in time for a light lunch in the newly refurbished castle.
Then it was check in and out to explore the site. Our room had an amazing view of the estuary and even had complimentary sherry. Perfect pre dinner drink!
Had a great time exploring the compound “I am not a number I’m a free man” was going round in my head. It truly is a magical place and it’s fantastic that someone thought to build it. After a bracing walk along the beach to catch the sunset it was back to the bar for drinkers. Well it was gin o clock!
We were booked in for dinner in the hotel, the dining room was like something from a 1930’s cruise ship. The food was gorgeous, I had locally smoked salmon to start followed by steak, I was do full but managed to have lemon posset for pud. I have never seen a pudding so big!!

Started the day with full welsh breakfast, which was just like a full English with the addition of fried potatoes!
Our journey home took us round the north coast of Wales. Called into Llandudno which appeared to be the home on the Austrian blind! Did the journey round the great orme. Had great panoramic views of the landscape.
Called into Chester on the way home and had a late lunch at Artichoke on the canal side. They are one of my customers so was lovely to see them and the food was excellent.
Then it was back home but at least was a short week 🙂

Oh what’s occurring 3/4 March

Had some holidays to use up so decided to head down to Cardiff to visit some family.
Not done too much exploring in Wales, on Sunday did a lovely walk along the beach on Barry Island. It was such a bright sunny day but was a little blustery so blew the cobwebs away!
Had a go on Nessa’s slots and a coffee in Marcos, that last sentence will be lost on non Gavin and Stacey fans!!
No trip would not be complete without me taking cake, the girls are addicted to my brownies and had even made some for me!! So chocolate and banana cake and brownie were taken for treats 😃

Chocolate & Banana Cake

Ingredients
100ml sunflower oil
175g caster sugar
175g SR flour
1/2 tsp bicarbonate of soda
100g dark chocolate chopped into chunks
175g very ripe bananas mashed
3 eggs, 2 separated
50ml milk

Heat oven to 160/140 fan
Grease and line a 2lb loaf tin (I cheat and use my trusty loaf tin liners from Lakeland)
Place all the dry ingredients into a mixing bowl, add chopped chocolate, banana, oil, milk, whole egg plus 2 yolks. Mix well. In separate bowl whisk egg whites till stiff.
Add 1/4 of egg white to loosen mixture, then gently stir in the rest.
Pour into prepared tin and bake for 1hour 15 or until a skewer inserted comes out clean.

Travelling coffee girl 27th Feb

Well Monday morning already, weekends go way too quickly 😦
It was off down to Red Bank farm to see a prospective new customer at Archers Cafe. Just a mile off the A6 and in the middle of nowhere with an amazing view of Morecambe Bay. Our coffee was well received and hopefully will join the band of Farrers customers?
I was talking about food, no change there! I came away with 2 homemade organic lamb burgers made to their secret recipe and a pot of Morecambe Bay shrimps! I had never tried the shrimps before! I had them that evening warm on hot buttered toast and pleased to report they were delicious!! Nom nom

Arnside knott

Well Sunday again and the weather was not as good as forecasted! Looked a bit dreary up the lakes so thought would head down to Arnside. Not been up Arnside Knott for about 18 years!
It is such a nice walk and didn’t really appreciate how large the Morecambe bay area was! When we got onto the top of the knott the cloud descended do could not see the 360 view of the surrounding hills 😦
A quick descent and a walk along the prom for fish and chips! It was national chip week so would be rude not to partake! There is something so honest about the chippy cafe, just simple food served well with no pretentions! Not warm enough for an ice cream, will save that for summer 🙂
