This is such an easy recipe to do and my dinner guests were suitably impressed!
Into a food blender place the following:
4 chopped spring onions
3 garlic cloves
A good handful of coriander
1 de seeded chilli
Thumb sized piece of ginger chopped
Blitz then add 4 boneless chicken thighs and 2 breasts chopped and blitz again.
With wet hands makes 18 patties and place onto a greased baking tray.
Bake at 190 for 20 mins.
Serve with chilli dipping sauce and rocket.
